Ingredients for Chole Bhature Recipe

  • As required For chhole
  • 62.50 gms kabuli chana
  • 1 nos Onions
  • 0-1/4 nos Tomatoes
  • 3/4 nos green chillies
  • 1/4 piece bigginger
  • 0-1/2 nos Garlic Cloves
  • 1/4 tbsp Salt
  • 1/2 tsp Chhole masala
  • 0.06 tsp Haldi
  • 1/2 tsp Kashmiri chilli powder
  • 1/4 tsp jeera seeds (cumin seeds) –
  • 0.13 tsp garam madala
  • 0.06 tsp Hing
  • 3/4 tbsp Coriander
  • As required For potli
  • 1/4 tsp tea leaves
  • 1/2 pieces tejpatta.
  • 3/4 nos Cloves
  • 1/4 nos black elaicho
  • 1/4 tsp variyali
  • As required For Tempering
  • 3/4 tbsp Ghee
  • 1/4 tbsp Oil
  • 1/4 tsp jeera seeds (cumin seeds) –
  • 1/2 nos tejpatta.
  • 3/4 nos Cloves
  • 0-1/4 nos Elaichi
  • 1/2 nos Bay leaves
  • 0.13 tsp Ajwain
  • As required For bhature
  • 0.13 cup rava
  • 3/4 tbsp Curd
  • 0.13 cup Water
  • 1/4 tsp Salt
  • 3/4 cups Maida
  • 1/4 cup Milk
  • 0-0.13 cup Water

Directions: Chole Bhature Recipe

  • STEP 1.Soak Kabuli chana overnight
  • STEP 2.Using a clean white cloth, make a potli of tea leaves, variyali, elaicho, taj and cloves.
  • STEP 3.Add salt and the potli to soaked chhole and cook in pressure cooker to 5-6 whistles or until the chhole are boiled properly.
  • STEP 4.Meanwhile, chop the onions. Make a paste of chilli, ginger and garlic,. Also crush the tomatoes.
  • STEP 5.In a kadhaai, take ghee and oil. Add in jira, khada masalas and ajwain.
  • STEP 6.Add in the chopped onions and cook well. When onions are done add in chilli-ginger-garlic paste.
  • STEP 7.After 1 minute add in the crushed tomato puree. Add salt and haldi. Cover and cook well until the fat separates.
  • STEP 8.Open cooker remove the potli and take 4tbsp of boiled chhole and mash well(to give thickness to the gravy). Ready the dry masalas.
  • STEP 9.When tomatoes are well cooked add in the masalas. After 2 minutes add in the boiled chhole, mashed chhole and some of the chhole-boiled water.
  • STEP 10.Mix and cook well for 8-10 minutes. Add in slit green chillies, ginger juellienes and kashmiri chilli powder. Add chhole-boiled water if required and set the desired consistency.
  • STEP 11.Lastly, add 1tbsp ghee and coriander.
  • STEP 12.For Bhature:
  • STEP 13.Mix rava, curd and little water and make a paste. Rest this paste for 15 minutes.
  • STEP 14.For Dough:
  • STEP 15.Mix paste, salt into the maida. Add milk and water as required and knead a soft dough.
  • STEP 16.Smoothen it with 1/2 tsp oil. Note not to put more oil, else Bhature will get oily.
  • STEP 17.Rest this dough for at least 2 hours. Now make 8-9 portions of the dough. Heat oil for deep fry. Roll out a big bhature.
  • STEP 18.Deep fry bhature carefully. We like to fry bhature a bit reddish.
  • STEP 19.Similarly, make bhatures and serve hot Chhole bhature with onions lachha, lemon wedge, green chilli and pickles. Enjoy with family and friends. Happy Cooking
