Cooking Directions

  • STEP 1.To make the chole, soak chickpeas overnight and cook them with spices, onions, and tomatoes until tender.
  • STEP 2.Prepare a masala paste with ginger, garlic, and spices, and add it to the cooked chickpeas.
  • STEP 3.Simmer the chole for a few minutes until the flavors meld together.
  • STEP 4.To make the bhature, mix all-purpose flour, yogurt, baking powder, and salt to form a soft dough.
  • STEP 5.Divide the dough into small balls and roll them into flat discs.
  • STEP 6.Deep fry the bhature until they puff up and turn golden brown.
  • STEP 7.Serve the chole hot with the bhature and garnish with chopped onions, coriander leaves, and a squeeze of lemon juice.
