Ingredients for Chirote / Crispy Layered Sweet Puri Recipe

  • 1 Cups For the dough:- flour/maida
  • 2 tbsp Ghee
  • As Required water for kneading dough
  • 1/2 tsp Oil
  • 3/4 cup For the sugar syrup:- suger
  • 0.33 cup water
  • 1 Tsp Elaichi/cardamom powder
  • 2 tbsp To be mixed together:-ghee
  • 1 tbsp Rice flour
  • 1 tbsp Flour/maida
  • As Required For the garnish mixed chopped nuts

Directions: Chirote / Crispy Layered Sweet Puri Recipe

  • STEP 1.For the dough:-
  • STEP 2.In a wide bowl, mix maida, ghee and knead into a stiff dough adding water gradually.
  • STEP 3.Add ½ teaspoon oil and knead the dough again.
  • STEP 4.Dough should not be soft and smooth. It should be same as that of a puri. Cover and set aside for 15-20 minutes.
  • STEP 5.For the sugar syrup:-
  • STEP 6.To prepare sugar syrup, add sugar and water in a pan and allow to boil. Once the syrup starts boiling, reduce the flame to low and check the consistency of sugar syrup.
  • STEP 7.You should have a one string consistency sugar syrup.
  • STEP 8.Switch off the flame and add cardamom powder. Set aside
  • STEP 9.Preparing Puris
  • STEP 10.Divide the dough in 6 equal parts and make balls out of it.
  • STEP 11.Roll out each ball into a big round (big sized roti).
  • STEP 12.Now take 1 roti and apply ghee-flour mixture and spread evenly on it. Place another roti on it and apply ghee-flour mixture over it. Now, place the third roti and apply the ghee-flour mixture.
  • STEP 13.Then roll them up. With the help of a knife, cut small pieces of the roll. These would now look like mini swiss rolls.
  • STEP 14.Repeat the same process for the remaining 3 rotis.
  • STEP 15.Take a small piece that we had cut from that roll on a rolling pin. Press it lightly with your palm and roll into a small disc shape (puri shape). Roll it gently.
  • STEP 16.In the same manner, prepare all the other puris.
  • STEP 17.Heat oil for frying puris.
  • STEP 18.Fry the prepared puris till light golden and crisp.
  • STEP 19.Immediately soak these puris in the prepared warm sugar syrup. When you dip the puris, syrup should neither be too hot nor at room temperature. It should be warm.
  • STEP 20.Soak for 1-2 minutes.
  • STEP 21.Take out on a plate and sprinkle chopped nuts over them.
  • STEP 22.Once cooled, store them in an air-tight container.
