Ingredients for Chirer Payesh or Kheer Poha Recipe

  • 1 cup Chire/Flattened Rice/Poha: Gently Fried & Well Strained
  • 3/4 cup 3/4-1 cup
  • 1 Litre L Fresh Milk: Boiled and Reduced to half of it
  • 1/4 cup Granulated Sugar: If you want it more sweetened
  • 3 g 3-4 . G
  • as required Dry Fruits: Finely Chopped
  • a pinch Saffron: Optional (Garnish)
  • 1 Pieces Bay Leaf: Optional
  • 1 tsp Rose Water (Edible)
  • as required Cooking Oil/Ghee: To Fry the Poha/Chire
  • 1 cup Poha (Mentioned Above too)

Directions: Chirer Payesh Or Kheer Poha Recipe

  • STEP 1.Firstly: In a Saucepan-
  • STEP 2.Boil the milk & while continuously boiling it reduce it to half of its initial quantity-
  • STEP 3.At this point, add in the Bay Leaf & 2 Green Cardamoms- Slit-
  • STEP 4.While the milk is boiling: In the interim- We need to gently deep fry the Poha- For that, we’d require to heat up a wok/kadhai over the medium flame & add in sufficient amount of cooking oil/ghee or both together to deep fry the same- It should be deep fried but not at all browned- VVI
  • STEP 5.Add in the Milkmaid to it & the sugar (if you’re using it additionally), a pinch of saffron too, if you choose to do so-
  • STEP 6.Stir continuously while, at this point it’d tend to get thicker & catch the bottom of the pan easily hence, need to keep a close check on it while stirring as much as is possible- It’s now good time to add in the chopped dry fruits to it & mix everything well together until nicely combined and well incorporated
  • STEP 7.Add in the Rose Water too & then, add in the Fried Poha into it now- Give it all a really good mix & cook it for a couple of mins time & bring it to a boil before turning off the flame- Finally, add in the Cardamom Powder- Mix everything well enough to get well combined and nicely incorporated with each ingredients used into it-
  • STEP 8.Need to keep it a bit thin while putting off the flame since once it’s cooled down completely it’d get thickened substantially
  • STEP 9.This is required to be, for any ‘Kheer’ consistency Transfer it to a separate serving bowl: Garnish it your own way & serve it either Hot or Chilled (keep it in the refrigerator for about a couple of hours time before serving it)-
  • STEP 10.Both ways it tastes absolutely Divine & extremely flavourful & delectable-
