Deep fried potato, cucumber and prawns stir fried with spicy sichuan sauce, red chillies ginger and garlic.A perfect Chinese dish for the winter. Prawns are stir-fried with garlic and onion, then simmered with rice vermicelli and chicken stock. Add more chilli oil at the end, if you prefer your food spicy.

Ingredients for Chinese Spicy Prawn Dry Hot Pot Recipe

  • 300 gram Raw prawns
  • 1 No.s Potato
  • 1/2 Cucumber
  • 1 bunch Coriander
  • 2 No.s Dried red chillies
  • 1 No.s Spring onion
  • 5 gram Ginger
  • 3 No.s Garlic Cloves
  • 1 tablespoon Sichuan spicy paste or sauce
  • 1 tablespoon Light soy sauce
  • 1 teaspoon White sugar
  • 1 tablespoon Cooking wine
  • 1 tablespoon Roasted peanuts
  • 1 teaspoon Sesame Seeds

Directions: Chinese Spicy Prawn Dry Hot Pot Recipe

step 1

  • STEP 1.1 in a wok heat ½ ltr oil on high heat, deep fry 1 potato cut into medium thick stripstill golden, add ½ cucumber cut into medium thick slices and deep fry for 10 seconds. Remove and drain both the potato and cucumber and keep aside.

step 2

  • STEP 2.2 in the same hot oil add 300 gm shelled and deveined prawns and deep fry till they curl. Then remove from the wok.

step 3

  • STEP 3.3 drain off most of the oil from the wok, retaining only 2 tbsp.

step 4

  • STEP 4.4 heat the oil, add 1 roughly chopped spring onion, 5 gm sliced ginger, 3 cloves thinly sliced garlic and stir fry for 1 minute.

  • STEP 5.5 then add 1 tbsp sichuan spicy paste or sauce and fry for 1 minute.

step 6

  • STEP 6.6 add 2 roughly chopped dried red chillies, fried potatoes, cucumber, prawns and stir fry for 1 minute.

step 7

  • STEP 7.7 add 1 tbsp light soy sauce, 1 tbsp cooking wine, 1 tsp white sugar and stir fry for 1 minute.

step 8

  • STEP 8.8 garnish with 1 tbsp roasted peanuts, 1 tsp sesame seeds and a small bunch of roughly chopped coriander.
