Ingredients for Chinese Spicy Lime Chicken Salad Recipe

  • 2 Chicken breast Nos
  • 1/2 Lime Nos
  • 30 gram Coriander finely chopped
  • 3 Garlic finely chopped cloves
  • 10 gram Ginger
  • 3 Small red chillies finely chopped Nos
  • 1 tablespoon Light soy sauce
  • 1/2 No.s Apple thinly sliced
  • 1 Star anise Nos
  • As required Chicken Stock
  • As required Salt

Directions: Chinese Spicy Lime Chicken Salad Recipe

step 1

  • STEP 1.1 fill a pan with 1 litre water, 2 chicken breasts, 5 gm thinly sliced ginger, ½ an apple thinly sliced and 1 star anise.

step 2

  • STEP 2.2 boil the chicken for 25 minutes.

step 3

  • STEP 3.3 then remove the chicken from the water and allow it to cool.

step 4

  • STEP 4.4 when the chicken has cooled, shred it and place it in a mixing bowl.

step 5

  • STEP 5.5 add 1 tbsp soy sauce, ¼ cup chicken stock, 30 gm finely chopped coriander , 5 gm finely chopped ginger,3 finely chopped cloves of garlic, 3 finely chopped small red chillies, salt to taste and the juice of ½ a lime.

step 6

  • STEP 6.6 mix all the ingredients together well.

step 7

  • STEP 7.7 transfer to a serving bowl.
