    Preparation Directions

    • STEP 1.Wash 180 gm ginger root thoroughly to remove any mud. Slice the ginger and blend it.
    • STEP 2.Squeeze the blended ginger in a muslin cloth to extract the juice. A little more than ½ a cup of pure ginger juice is required.

    Cooking Directions

    • STEP 1.In a mixing bowl add 150 gm glutinous rice flour. To this slowly add a little more than ½ cup pure ginger juice and mix continuously with a fork till well incorporated.
    • STEP 2.Then knead by hand to make a dough.
    • STEP 3.Cover the bowl with a plastic film and let the dough rest for 15 minutes.
    • STEP 4.In a saucepan add 150 gms brown sugar and 30 ml water. Stir on low heat till it dissolves.
    • STEP 5.Once it begins to bubble profusely, let it cook for 40 seconds and then turn off the heat.
    • STEP 6.Let the sugar syrup cool for about 5 minutes. Do not let it cool completely.
    • STEP 7.Pour the melted sugar over the dough in the bowl.
    • STEP 8.Using a fork, break the dough into smaller pieces and mix it with the melted sugar.
    • STEP 9.Then use a hand whisk and stir/ whisk it for a few minutes till completely well combined.
    • STEP 10.)Place a sieve over an 8 inch wide flat non stick baking pan and pour the mixture through the sieve. It should fill the pan upto ⅓ inch. If the batter is too thick it may not cook completely.
    • STEP 11.Place the pan in a steamer and steam for 40 minutes.
    • STEP 12.After 40 minutes check the batter by inserting a toothpick, if the batter attached to the toothpick is transparent, then it is ready and the pan can be removed from the steamer. If the batter is still thick and opaque, then it needs to steam for a few more minutes.
    • STEP 13.When the batter is cooked, remove the pan from the steamer.
    • STEP 14.Cover it with plastic film and set it in the refrigerator overnight.
    • STEP 15.The next day take the ginger sweet out of the pan.
    • STEP 16.Wet a knife with cold water so that the sweet does not stick to the knife. Cut it into long strips.
    • STEP 17.In a mixing bowl add 1 cup or more of shredded coconut and toss each strip in the coconut till well coated.
    • STEP 18.Once all the ginger strips are coated, stack them and cut into short 1 inch pieces.
    • STEP 19.Return all the pieces to the bowl with more shredded coconut and toss them altogether.
    • STEP 20.Ginger candy is ready.

    Special Comments

    • STEP 1.If the baking pan is not non-stick, line it with parchment paper.
    • STEP 2.Instead of shredded coconut, the ginger candy can also be tossed in powdered sugar.
