A tasty preparation of slow cooked spare ribs tossed with bell peppers and flavoured with ground cumin.Rib is one of the most popular choice in summer days, either braised to server a noodle or make a national sweet and sour ribs.
STEP 1.1 fill a pan with water and bring to a boil. Add 400gm spare ribs cut into 1 ½ inch chunks to the boiling water and boil for 1 minute.

STEP 2.2 then remove and drain the ribs.

STEP 3.3 in a wok heat 2 tbsp oil, add 1 cinnamon stick, 1 star anise, 3 bay leaves, 30 gm finely chopped ginger and stir fry for a few seconds till aromatic.

STEP 4.4 add the blanched ribs to the wok and stir fry for 1 minute, mixing all the ingredients together well.

STEP 5.5 next, transfer the ribs and spices to a saucepan and add 1 tbsp cooking oil, 1 tbsp light soy sauce, 500 ml water and salt to taste.

STEP 6.6 add 1 tbsp dark soy sauce and bring to a boil.

STEP 7.7 cover the pan and cook for 1 hour in low heat.

STEP 8.8 after an hour open the pan and remove the cinnamon stick, bay leaves and star anise.

STEP 9.9 add 20 gm green bell peppers and 25 gm red bell peppers, cut into bite size pieces, 1 tsp chicken powder, 1 tbsp cumin powder and stir well.

STEP 10.10 cook for 1 minute.

STEP 11.11 next add 6 cloves of finely chopped garlic and 20 gm finely chopped coriander and stir well together.

STEP 12.12 remove from the pan and serve hot.
