  • 0.33 cup Water

Cooking Directions

  • STEP 1.Heat oil in a pan and roast the brinjals until they turn soft and golden brown.
  • STEP 2.In the same pan, add mustard seeds, urad dal, curry leaves, and dried red chilies. Saute until the mustard seeds splutter.
  • STEP 3.Add chopped onions and saute until they turn translucent. Then add turmeric powder, sambar powder, and salt. Mix well.
  • STEP 4.Add tamarind pulp, jaggery, and water. Cook until the raw smell of tamarind disappears and the gravy thickens.
  • STEP 5.Add the roasted brinjals and mix gently. Cook for a few more minutes until the flavors blend well.
  • STEP 6.Garnish with fresh coriander leaves and serve hot with idli, dosa, or rice.

Cooking Tips

  • Choose small and tender brinjals for better taste and texture.
  • Roasting the brinjals adds a smoky flavor to the dish. You can also grill them for a similar effect.
  • Adjust the spice level according to your preference by adding more or less sambar powder and red chilies.
