  • 1.50 kilogram whole chicken
  • As required oven chips
  • As required ketchup, american mustard and mayonnaise
  • As required PIRI PIRI MARINADE
  • 3 No.s red chillies
  • 2 No.s garlic cloves
  • 1 piece Ginger
  • 1 teaspoon dried oregano
  • 1 teaspoon ground coriander
  • 1 teaspoon Paprika
  • 2 tablespoon red wine vinegar
  • 2 tablespoon groundnut oil
  • As required WINTER SLAW
  • 1 red onion nps
  • 2 No.s Carrots
  • 1 No.s beetroot
  • 4 No.s baby leaf greens
  • 2 tablespoon Mayonnaise
  • 2 tablespoon greek yogurt
  • 2 teaspoon red wine vinegar
  • 1 teaspoon cumin seeds

Directions: Chicken With Winter Slaw Recipe

step 1

  • STEP 1.Mix together all of the marinade ingredients in a small food processor.

  • STEP 1.Rub the marinade onto the chicken and leave for 1 hour at room temperature.

step 3

  • STEP 2.Heat the oven to 190c/fan 170c/gas 5. Put the chicken in a roasting tray and cook for 1 hour 20 minutes.

step 4

  • STEP 3.Rest under loose foil for 20 minutes. While the chicken is resting, mix together the slaw ingredients and season. Serve the chicken with slaw, fries and condiments.
