A spicy,savoury Moroccon dish prepared with a combination of couscous, which are tiny steame balls of semolina flour, chicken, thighs, onion, garlic and peppers. This delicious mouth watering recipe is traditionally served with a stew spooned on top and is prepared with some flavourful spices that will surely soothe your taste buds.

Ingredients for Chicken Vegetable Couscous Recipe

  • 2 cup Couscous
  • 1-1 pound 2 Boneless Chicken Thighs Cubed or cut into strips
  • 4 tablespoon Oil Divided into two
  • 3 cloves Garlic
  • 4 Nos Scallions Divided
  • 1 Nos Red Bell Pepper
  • 1 Nos Scotch Bonnet
  • 3/4 cup Onion
  • 1 teaspoon Paprika
  • 2 cup Chicken Stock
  • As required Parsley
  • As required Salt and Black pepper

Directions: Chicken Vegetable Couscous Recipe

step 1

  • STEP 1.Add 2 tbsp oil in a pan, heat it and add chicken, salt, black pepper,paprika, curry powder and cook it for 7 minutes.

  • STEP 1. Transfer it into abowl and keep it aside,

  • STEP 1. Using the same pan add 2 tbsp oil,onions, scotch bonnet, garlic, and bell peppers. And saute it for 3-4 minutes and add half of the greens,stock and bring it to a boil.

  • STEP 1.Then add couscous,cover right after adding and turn off the flame and let it rest for 5-6 minutes and serve.

  • STEP 1. Garnish with green onions and parsley.
