  • 1.50 pound Boneless Chicken Breasts
  • 1 tablespoon Olive oil
  • 1/2 Yellow onion roughly chopped
  • 1 tablespoon Chopped garlic this was about 3 cloves for me
  • 1 Tomatillos husked, rinsed, and roughly chopped
  • 1/4 teaspoon Cumin
  • 1/4 teaspoon Dried oregano
  • 15 ounce Canned fire roasted tomatoes i used 2 14.5 oz cans of muir glen fire roasted crushed tomatoes
  • 2 tablespoon Canned chipotles in adobo chopped
  • 1/2 cup Low sodium chicken broth
  • As required Salt
  • As required Pepper
  • As required Corn Tortillas
  • As required Diced white onion
  • As required Freshly Chopped Cilantro
  • As required Freshly sliced limes
  • As required Avocado
  • As required Guacamole
