Chicken Sholay Kebab Recipe is a lip smacking, spicy chicken kebab, coated in a masaledar batter and deep fried, served with a topping of crispy fried curry leaves. Great to be served as a party appetizer or along with a simple meal of rasam and rice for a comfort meal over the weekends.

Ingredients for Chicken Sholay Kebeb Recipe

  • 2 cup Methi leaves roughly chopped
  • 1 No.s Drumstick quartered
  • 10 No.s Baby onions quartered
  • 1 No.s Tomato quarters
  • 2 tablespoon Sambar powder
  • 1/2 teaspoon Turmeric powder
  • 1 cup tamarind water
  • As required Ingredients for Tempering
  • 1 teaspoon Gingelly oil
  • 1 teaspoon Mustard seeds
  • 1/4 teaspoon Asafoetida
  • 1 sprig Curry leaf
  • 2 No.s Dry red chilli

Directions: Chicken Sholay Kebeb Recipe

  • STEP 1.In a mixer grinder jar add 2 inches ginger chopped, 6 cloves garlic, 2 slit green chillies. Add some water and blend to make smooth paste.
  • STEP 2.For the chicken sholay batter, in mixing bowl add 1tbsp rice flour, 1 tbsp gram flour, 3 tbsp all purpose flour, 2 tsp sambar powder, 2 tbsp kashmiri red chilli powder, salt to taste, 1 tsp cumin powder, 1 tsp coriander powder and mix. Then add the ground ginger garlic chilli paste and mix well.
  • STEP 3.Add ¼ cup of water or as required and mix to make a thick paste.
  • STEP 4.Dip the cut boneless chicken breasts into batter and then carefully slide into preheated oil for deep frying in a kadai.
  • STEP 5.Deep fry on medium heat till dark golden brown and crisp. Remove from oil and drain on a kitchen paper towel.
  • STEP 6.Add curry leaves into the same oil and fry till crisp.
  • STEP 7.When serving, add the curry leaves on the top of the chicken sholay kebab.
