Delicious and juicy, seekh kebabs are usually prepared with minced lamb meat. My take on this traditional north indian delicacy is using minced chicken and freshly prepared coriander pesto.
Ingredients for Chicken Seekh Kabab From Coriander Pesto Recipe
1/2 chicken breasts finely minced
1 garlic cloves finely chopped
1/4 inch ginger finely chopped
0.08 cup onions finely chopped
0.08 cup coriander pesto, made by grinding coriander stems with 4 green chillies, 2 tbsp olive oil and 1 tbsp lemon juice Do not use any water in pesto
1 tablespoon cashews blanched and grounded to a fine paste
1/4 teaspoon garam masala
1/4 teaspoon white pepper powder
1/4 tablespoon kashmiri mirch powder
1/4 teaspoon chat masala
As required Black salt or normal salt
2 stick bamboo soaked in water for atleast 30 minutes
As required oil for shallow frying
