STEP 3.Into a bowl add and mix melted butter, red chilli powder, coriander powder, cumin powder, pepper powder, mixed herbs, minced garlic, lemon juice, salt.
STEP 4.Apply this marinade to the chicken inside out very nicely.
STEP 5.Take the mint leaves and 1 lemon cut into half and stuff it into the chicken cavity.
STEP 6.Tie the legs of the bird together and pull the string towards the neck and tie it along to secure it well.
STEP 7.Keep this overnight in the fridge or for 3-4 hours.
STEP 8.Next roughly chop carrots, beans, potatoes, onions and apply the marinade to these vegetables too.
STEP 9.Preheat the oven.
STEP 10.Place the marinated chicken in a baking dish and the vegetables beside the chicken.
STEP 11.Cover the dish with aluminum foil.
STEP 12.Bake it in the preheated oven at 200°C for 45 minutes. Remove the foil and continue baking for another 20 minutes.
STEP 13.Take it out of the oven and place it on the table and enjoy a hearty meal.
