  • 0.17 tablespoon Butter
  • 0.17 Small onion, minced
  • 0.33 Garlic Cloves, Minced
  • 0.17 pound Mushrooms, chopped coarsely
  • 1/25 cup Chicken Broth
  • 1.50 ounce Fresh spinach, washed, drained and coarsely chopped
  • 0.33 cup Cooked chicken, shredded or cubed
  • 0.13 cup Chicken Broth
  • 0.17 cup Sour cream
  • 0.08 cup Cilantro, Chopped
  • 1.33 Flour Tortillas
  • 1/4 cup Monterey Jack Cheese, Shredded
  • As required Diced chillies
  • 0.17 Cup Shredded cheddar cheese
  • As required as needed red chili powder
  • Tbsp Cumin powder- ½
  • As required Salt pepper

Cooking Directions

  • STEP 1.Preheat your oven to 175°. Then, in a large skillet, heat a little bit of oil over medium heat. Add the chopped onions and garlic and sauté until they become translucent.
  • STEP 2.Add the sliced mushrooms and cook until they release their moisture and start to brown.
  • STEP 3.Stir in the chopped spinach and cook until it wilts. Add the shredded chicken, cumin, chili powder, salt, and pepper. Cook for a few more minutes until everything is well combined. Remove the filling from the heat.
  • STEP 4.In a separate saucepan, melt the butter over medium heat. Stir in the flour to create a roux and cook for a minute or two until it's lightly browned.
  • STEP 5.Gradually add the chicken broth while whisking continuously to prevent lumps. Cook until the sauce thickens.
  • STEP 6.Remove the saucepan from the heat and stir in the sour cream and diced green chilies. Season the sauce with salt and pepper to taste.
  • STEP 7.To assemble the enchiladas, warm the corn tortillas in the microwave or on a dry skillet for a few seconds to make them pliable.
  • STEP 8.Spoon a portion of the chicken, mushroom, and spinach filling onto each tortilla, then sprinkle with shredded Monterey Jack or Mexican cheese. Roll up the tortillas and place them seam-side down in a greased 9x13-inch baking dish.
  • STEP 9.Pour the prepared sauce over the enchiladas, making sure they are all evenly coated. Sprinkle the top with the cheddar cheese. Cover the baking dish with aluminium foil and bake in the preheated oven for about 20-25 minutes, or until the enchiladas are hot and the cheese is melted and bubbly.

Cooking Tips

  • Use rotisserie chicken for ease of cooking
  • If you like, you can remove the foil for the last 5 minutes to allow the cheese to brown slightly.
