  • 1/2 Large carrots peeled and shredded
  • 1/4 tablespoon Minced mint leaves
  • As required Salt and pepper to taste
  • 1/4 Head lettuce separated into leaves
  • 1/4 tablespoon Minced lemon verbena or lemon balm leaves optional
  • As required Sweet chili sauce and/or sriracha optional for serving
