This is basically a classic recipe from Saudi Arabia. But, you can find different variations of this dish in the neighbouring countries too. Chicken and rice are cooked in a beautiful spice mix making this one of the best one pot rice recipes ready to entertain you and your friends on any special occasion. To be exact, this kabsa recipe is by far one of my all-time favorite rice recipes.

  • 0.17 g KABSA SPICE MIX
  • 1/25 tsp ground cardamom (cardamom powder)
  • 1/25 tsp ground white pepper (white pepper powder)
  • 1/25 tsp Saffron
  • 0.08 tsp ground cinnamon (cinnamon powder)
  • 0.08 tsp Ground all spice
  • 0.08 tsp dried whole lime powder
  • 0.17 g CHICKEN KABSA
  • 0.33 tbsp Oil or butter
  • 1/2 g Onions
  • 0.17 g Sliced
  • 0.17 tbsp minced ginger (ginger paste)
  • 0.17 tbsp minced garlic (garlic paste)
  • 0.17 Pieces reen chili
  • 0.33 Pieces Dried bay leaves
  • 1 Pieces Cloves
  • 0.67 Pieces Cardamom pods
  • 0.17 Pieces Cinnamon stick
  • 0.33 tbsp tomato puree (tomato paste)
  • 0.17 g pinch ground nutmeg (nutmeg powder)
  • 0.08 tsp ground black pepper (black pepper powder)
  • 1/25 tsp ground cumin (cumin powder)
  • 0.08 tsp ground coriander (coriander powder)
  • 1/2 Pieces Medium carrots
  • 33.33 g 200 g
  • 0.33 g Chicken stock cubes
  • 1/4 kg 1 1/2 kg
  • 1 pieces Cut into
  • 1/2 cups Basmati rice
  • 1/25 g Raisins
  • to taste Salt
  • 1.67 Pieces Raisins
  • 1.67 Pieces Slivered almonds
  • 0.17 g For sauce
  • 0.17 tbsp Oil
  • 0.67 Pieces garlic pods
  • 0.67 tbsp Schezwan chutney
  • 0.33 tbsp Hot and sweet sauce
  • 0.17 tsp Say sauce
  • 0.33 tsp Corn flour
  • 0.17 g water

Directions: Chicken Khepsa Rice #ChickenRecipes #FEM5k

  • STEP 1.INSTRUCTIONS
  • STEP 2.To make kabsa spice mix, combine together cardamom, white pepper, saffron, cinnamon, all spice and lime powder in a bowl. Set aside.
  • STEP 3.Heat oil in a large heavy bottomed pan over medium-high heat. Add onions, ginger, garlic and green chilies. Sauté for 2-3 minutes or until the onions turn golden brown. Add bay leaves, cloves, cardamom pods and cinnamon stick. Fry for a minute.
  • STEP 4.Stir in tomato purée. Add ground nutmeg, ground black pepper, ground cumin, ground coriander and kabsa spice. Season with salt. Fry the spices for a minute. Add carrots and diced tomatoes. Stir, and cook for 2 minutes.
  • STEP 5.Add chicken cubes and chicken pieces. Brown chicken, turning occasionally, for about 30 minutes. Remove the chicken pieces from the pan. Set aside.
  • STEP 6.Add rice and raisins. Pour in 4 cups water. Season with salt. Bring it to the boil. Reduce the heat, cover with lid, and simmer for 10-15 minutes.
  • STEP 7.Preheat grill. Grill chicken for 10-15 minutes or until cooked through. Serve rice with grilled chicken.
  • STEP 8.Make the Sauce
  • STEP 9.Heat oil and frybthe garlic and once the garlic tuns golden brown add the scezwan chutney and all the sauces mentioned.
  • STEP 10.Mix water with corn flour and add this slurry .
  • STEP 11.Once the sauce is ready add the grill chicken to it.
  • STEP 12.Now lets assemble
  • STEP 13.Place the rice in your serving dish.
  • STEP 14.Pour the chicken over it and enjoy it hot.
  • STEP 15.Doeanot need anything else
