Ingredients for Chicken Cocktail With Satay Dipping Sauce Recipe

  • 200 gram Chicken breast thinly sliced
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Black peppercornscoarsely ground
  • 1 Lime juice lime
  • 1 tablespoon Fish sauce
  • 1 tablespoon Dark brown sugar
  • 150 gram Satay sauce for dipping
  • 2 tablespoon Oil

  • STEP 1.1 soak 30 cocktail sticks in cold water for 1 hour

  • STEP 2.1 in a mixing bowl add 200 gm thinly sliced chicken breast, 1 tsp garlic powder, ½ tsp coarsely ground black peppercorns, 1 tbsp dark brown sugar, 1 tbsp fish sauce, juice of 1 lime and mix all the ingredients together well to ensure the chicken is well coated.

  • STEP 3.2 keep aside to marinate for 1 to 2 hours.

  • STEP 4.3 take a soaked cocktail stick and thread it through a slice of chicken to form a mini skewer.

  • STEP 5.4 repeat this process till all the slices of chicken are skewered on the remaining cocktail sticks.

  • STEP 6.5 in a small saucepan place the store-bought satay sauce on low heat and cook for 2 minutes, stirring continuously.

  • STEP 7.6 turn off the heat and keep the pan aside.

  • STEP 8.7 brush a griddle pan with 2 tbsp peanut oil and place it on high heat.

  • STEP 9.8 then arrange the mini skewers of chicken on the pan in rows of single layers.

  • STEP 10.9 fry for 2 minutes on each side till golden brown.

step 12

  • STEP 11.10 use tongs to remove the cocktail chicken from the pan.

step 13

  • STEP 12.11 transfer to a platter and serve with satay dipping sauce and a side salad.
