  • 3 ounce Baby portobello mushrooms halved or quartered
  • 1/2 tablespoon Shallots finely diced
  • 3/4 Cloves garlic finely diced
  • 0.08 cup White wine dry
  • 0.08 cup Marsala *traditionally cognac or brandy is used
  • 1/2 tablespoon Tomato paste
  • 0.92 cup Chicken stock
  • 0.17 cup Beef stock *you can use all chicken stock
  • 1/4 tablespoon Tarragon chopped
  • 1/2 tablespoon Heavy cream *you can substitute greek yogurt or sour cream
  • 1/4 tablespoon Finely chopped parsley for garnish
