A simple and tasty stir fry of chicken and sweetcorn tossed with bell peppers and flavoured with ginger, spring onions and soy sauce. This lightly sweet, tropical stir-fry has hints of cumin, chile and ginger, but the really vibrant flavor comes from a fresh pineapple.

Ingredients for Chicken And Sweet Corn Stir Fry Recipe

  • 1 gram Chicken breast diced into cm cubes 200
  • 100 gram Sweet corn
  • 1 gram Red bell pepper diced into cm cubes 100
  • 2 No.s Spring onions finely chopped
  • 5 gram Ginger finely chopped
  • 1 tablespoon Light soy sauce
  • 1 tablespoon Cooking wine
  • 1 teaspoon Oil for marinade
  • 20 gram Cornflour
  • As required Salt

Directions: Chicken And Sweet Corn Stir Fry Recipe

step 1

  • STEP 1.1 in a large mixing bowl add 200 gm chicken breast diced into 1 cm cubes, 20 gm cornflour, 1 tbsp cooking wine, 1 tsp oil, pinch of salt and mix all the ingredients well to coat the chicken. Keep aside to marinate for 5 minutes,

step 2

  • STEP 2.2 in a wok heat 1 tbsp oil till smoking hot, then add the marinated chicken and stir well to separate the pieces and ensure that all the chicken is evenly cooked.

  • STEP 3.3 stir fry for 5 minutes. Then remove and keep aside.

step 4

  • STEP 4.4 in the wok heat 1 tbsp of oil, add 2 finely chopped spring onions, 5 gm finely chopped ginger and fry for a few seconds till aromatic.

step 5

  • STEP 5.5 add 100 gm sweet corn and stir fry for 1 minute.

step 6

  • STEP 6.6 to this add the fried chicken cubes and stir fry for 2 minutes.

step 7

  • STEP 7.7 add 1 tbsp light soy sauce and stir.

step 8

  • STEP 1.8 add 100 gm diced red bell pepper and salt to taste and stir for a few seconds. Turn off the heat. Transfer and serve it.
