Ingredients for Chicken And Mushroom Noodles Soup Recipe

  • 1 Chicken breast chopped Nos
  • 900 milliliter Chicken or vegetables stock
  • 10 gram Ginger finely chopped
  • 2 Garlic finely chopped cloves
  • 50 gram Rice Noodles
  • 2 tablespoon Canned sweet corn
  • 3 Mushrooms thinly sliced Nos
  • 2 Spring onions thinly shredded Nos
  • 2 teaspoon Light soy sauce
  • As required Basil leaves roughly chopped A handful

Directions: Chicken And Mushroom Noodles Soup Recipe

step 1

  • STEP 1.1 in a pan add 900 ml chicken or vegetable stock, 1 chicken breast, 2 cloves of garlic finely chopped and 10 gm of ginger finely chopped. Bring to a boil.

  • STEP 2.2 then turn the heat to low and cover and cook for 20 minutes.

step 3

  • STEP 3.3 after 20 minutes, turn off the heat. Take the chicken breast out of the stock and place it on a chopping board.

  • STEP 4.4 using a pair of forks pull the meat apart into threads.

step 5

  • STEP 5.5 return this shredded chicken to the stock in the pan.

  • STEP 6.6 add 50 gm rice noodles, 3 thinly sliced mushrooms and 2 tbsp canned sweet corn. Stir together.

  • STEP 7.7 add 1 thinly shredded spring onion and 2 tsp light soy sauce and let it come to a boil.

step 8

  • STEP 8.8 then turn the heat to medium and simmer for 3 to 4 minutes, stirring frequently until the noodles are tender. Turn off the heat.

step 9

  • STEP 9.9 transfer the chicken noodle soup to a bowl. Garnish with 1 thinly shredded spring onion and roughly chopped basil leaves as desired and chili ( optional).

  • STEP 10.10 serve hot.
