A crunchy and healthy stir fry of chicken with bitter melon seasoned with soy sauce, oyster sauce and fermented blackbean. This recipe is a simple stir-fry with a garlic, chili flake, soy sauce, red wine vinegar, and sesame oil sauce. A little sugar helps combat the bitterness. There are also plenty of variations on bitter melon stir-fries, like adding dried shrimp or pork. Serve as a side dish for pork, chicken, or seafood alongside rice or noodles.

  • 1/4 No.s Medium size bittermelon chopped in inch slices 2
  • 170 gram Chicken sliced
  • 3 tablespoon Oil
  • 2 tablespoon Mixed ginger and garlic chopped
  • 1 teaspoon Sesame oil
  • 1 teaspoon Salt
  • 1 tablespoon Soy sauce
  • 1 tablespoon Oyster Sauce
  • 1 tablespoon Brown sugar
  • 1 teaspoon Fermented blackbeans chopped

Directions: Chicken And Bitter Melon Stir Fry Recipe

  • STEP 1.Cut 2 medium size bittermelon lengthwise in half and scoop out the seeds. Then cut them breadthwise into ¼ inch thick slices.
  • STEP 2.Fill a saucepan half full with water and bring it to a boil. Add the bittermelon slices and boil on high for about 5 minutes. This blanching helps to reduce the bitterness. Strain off the water and hold the vegetable under running water.
  • STEP 3. Place a wok on medium heat and add 3 tbsp oil, 2 tbsp of mixed ginger and garlic chopped and flash stir fry for 20 seconds. Push them to one side of the wok.
  • STEP 4. Add 6 oz sliced chicken and stir fry on high heat till the chicken sears on both sides.
  • STEP 5. Add 1 tsp sesame oil and mix.
  • STEP 6.Add the chopped bitter melon to the wok and toss well together.
  • STEP 7.Then add 1 tsp salt, 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp brown sugar (optional) to balance the bitterness, 1 tsp chopped fermented blackbeans .
  • STEP 8. Stir fry for a few minutes till flavours are well combined and turn off the heat.
  • STEP 9. Serve hot with rice.
