  • 2 tablespoon Oil
  • 1 Red Bell Pepper, Sliced
  • 1 Yellow Bell Pepper, Sliced
  • 1 Onion, Sliced
  • 1 Carrot, Julienned
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Fish Sauce
  • 1 Lime, Juiced
  • as needed Fresh Cilantro, For Garnish

  • STEP 1.In a bowl, marinate the chicken pieces with lemongrass, ginger, garlic, and Thai red curry paste for 30 minutes.
  • STEP 2.Heat oil in a wok or large skillet over medium-high heat. Add the marinated chicken and stir-fry until cooked through.
  • STEP 3.Add the bell peppers, onions, and carrots to the wok and continue stir-frying for a few minutes until the vegetables are tender-crisp.
