STEP 1.Take rice wash 2-3 times and soak for half an hour.Take a pan and add 1/2 tbsp ghee on medium flame.Add 1/2 cup chhena,salt according to taste,and 1/2 tbsp sugar.Now sauté for 2-3 minutes.Now take it out of the pan and set aside.
STEP 2.Now add 1 tbsp all purpose flour with remaining 1/2 cup chhena. Mix well.Now add salt according to taste ,sugar,pinch of garam masaala powder,dry roasted cumin-coriander powder,1/4 tsp amchur powder .Mix well and knead for 2-3 minutes and make a soft and smooth dough.
STEP 3.Now Apply ghee on palm,take small portion of dough and make small balls.Now heat a pan ,add 2 tbsp ghee on medium flame.add the chhena balls and fry until golden brown.Now take them out and keep aside.
STEP 4.Now drain the water from the rice and dry the rice for 10 minutes.Now take the rice ,add 1/2 tbsp garam masala powder (green cardamom,black cardamom,cinnamon,cloves,nutmeg,mace),finely chopped ginger,salt,turmeric,raisins and mix them well.
STEP 5.Now heat a pan on medium flame,add remaining ghee.add whole garam masala,bay leaves,black pepper bits and sauté for 30 seconds.Now add marinated rice and sauté for 2-3 minutes on low to medium flame.Now add 4 cups of hot water and cover with a lid.Cook for 10 minutes on low to medium heat.
STEP 6.After 10 minutes add finely chopped almond,green chillies,fried chhena ( not chhena balls )and sugar.mix gently and cover with the lid.
STEP 7.Now mix the saffron with warm milk. After 5 minutes, add fried chhena balls and saffron milk.Mix gently.Cover with the lid and cook for 3-4 minutes on medium flame.After 3 minutes turn off the heat and keep aside for 20-30 minutes.After 30 minutes it’s ready to serve.
