I love chettinad cuisine and i have had the opportunity to make a few in past. My favorite one by far is the chettinad vellai paniyaram. It was such a delicate dish that just melted in our mouth.
Ingredients for Chettinadu masala seeyam/masala cheeyam Recipe

0.19 cup Ullutham paruppu / Urad dal
1/4 onion – large
1 Green chili
As required Curry leaves – few
1/4 tablespoon oil – plus more to deep fry
1/4 teaspoon Mustard seeds
0.06 teaspoon Asafetida
