Ingredients for Chettinad Chicken Curry Recipe

  • 1/2 tablespoon Coriander seed
  • 1.50 Dried red chilies i like kashmiri chilies for this
  • 1/4 teaspoon Cumin seed
  • 1/4 teaspoon Poppy seeds
  • 0.13 teaspoon Black peppercorns
  • 1/2 inch Cinnamon bark also known as cassia
  • 1 Arms from 1 star anise literally break off a couple of the arms from 1 star anise. you don't need a lot
  • 1/2 Clove
  • 1 Green cardamom pods
  • pinch Ajwain optional
  • 1 teaspoon Chettinad masala see above
  • 1/2 teaspoon Kashmiri chili powder
  • 1/4 teaspoon Kasoor methi dried fenugreek leaves
  • 0.13 teaspoon Turmeric
  • 1/4 teaspoon Kosher salt
  • 1.50 tablespoon Vegetable oil any neutral oil is fine. coconut oil is nice as well. try 1/2 and 1//2
  • 1 inch 1 cassia bark
  • 2 tablespoon Onion chopped coarsely
  • 1/2 tablespoon Garlic ginger paste recipe link below
  • 5 Curry leaves fresh. and it's about . not exactly . just grab a few
  • As required The spice mix from above
  • 1/2 cup Indian hotel curry gravy don't worry if it seem to thick. the juices from the chicken will thin it out
  • 1.50-2 piece 3 boneless, skinless chicken thighs cut into each
  • 1.50 tablespoon Coconut milk
