Himachali Style Chana masala with lots of spices Madra is a thick yogurt based gravy which is a very popular dish in Himachal. Most of the time it is prepared in Himachal’s traditional function called Dhaam and is eaten along with rice and other similar delicacies.

Ingredients for Chana Madra Recipe

  • 2 cup chana
  • 1/2 teaspoon Salt
  • 3 bay leaf
  • 3 Cloves
  • 5-8 Black pepper
  • 2 Cardamom
  • 1 dal chin
  • 1 black cardamom
  • 2 red chilies
  • 1 teaspoon Jeera
  • 1 teaspoon coriander powder
  • 1 teaspoon kashmiri red chili powder
  • 1 teaspoon turmeric powder
  • 1 saunf and 2 cardamom powder
  • 2 pinch hing
  • 2 chopped green chilies
  • 1 tablespoon cashew nuts
  • 2 cup blended curd
  • 1 tablespoon rice flour
  • 1/2 cup Water
  • 2 tablespoon mustard seeds

Directions: Chana Madra Recipe

step 1

  • STEP 1.Soak the chana overnight and boil it in a pressure cooker,1tsp salt, 1bay leaves,1 clove, 3-4 black pepper & 2 cardamom , cook for 20 to 25mins

  • STEP 2.Blend the curd

  • STEP 3.Blend the rice flour with water to make a paste

    • STEP 4.Heat 2 tbsp mustard oil on a cooking pan, add 2 red chilies, 1 black cardamom,1 dal chini, 2 cloves,4 black peppers,2 bay leaves and 1tsp jeera, fry for 2 mins

    • STEP 5.Add cashew nuts,chopped green chilies

    step 7

    • STEP 6.Add 1tsp coriander powder & red chili powder and 1tsp turmeric

    step 8

    • STEP 7.Add saunf and cardamom powder

    step 9

    • STEP 8.Add the blended curd and stir well until it is mixed

    step 10

    • STEP 9.Add the rice flour paste and stir for 5mins

    step 11

    • STEP 10.Add the chana and 2 tbsp ghee and stir for 6mins

    step 12

    • STEP 11.Add sugar and salt to taste and cook for 2 mins

    step 13

    • STEP 12.Serve with roti or paratha
