  • 2 cup Carrots, Peeled And Chopped
  • 1 tablespoon Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Urad Dal
  • as needed A Few Curry Leaves
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chili Powder
  • As required Salt To Taste
  • 2 tablespoon Grated Coconut

Cooking Directions

  • STEP 1.Heat oil in a pan and add mustard seeds. Once they splutter, add urad dal and curry leaves.
  • STEP 2.Add chopped carrots and saut茅 for a few minutes until they are slightly cooked but still retain their crunch.
  • STEP 3.Add turmeric powder, red chili powder, and salt. Mix well and cook for a few more minutes.
  • STEP 4.Finally, add grated coconut and give it a quick stir. Remove from heat and serve hot.

Cooking Tips

  • Make sure to not overcook the carrots as they should retain their crunch.
  • You can adjust the spice level by adding more or less red chili powder.
  • Serve the Carrot Poriyal as a side dish with rice and dal or sambar.
