Carrot kheer is a very tasty sweet item which can be make in any occassion.This is a milk based dish which needs very less ingradients and it is packed with nutrients.I like to take this with poori in my snacks time.
STEP 1.1.In a pressure cooker take water cashew and carrot and boil until cashew and carrot become soft.switch off the flame and cool down completely.
STEP 2.2.put the boiled cashew and carrot in a blender and make a coarse paste.
STEP 3.3.Take the milk and bring it to boil.Add sugar and cook it until sugar melts.
STEP 4.Add the carrot and cashew paste and stir it and cook until the milk thickens.Add the food color and mix it nicely.
STEP 5.4.switch off the flame and let it cool down and serve the tasty carrot kheer with pistachio garnishing.
