Ingredients for carrot halwa Recipe

  • 1.33 Pieces Carrots
  • 0.33 packets Red Cow milk
  • As required as per requirement Cashew and Raisins
  • 0.67 Tbsp pure ghee
  • 1.33 nos green Cardamoms and cloves
  • 4.17 Pieces as per requirement Sugar or Batasha
  • 0.33 Tbsp as per requirement Jaggery

Directions: Carrot Halwa Recipe

  • STEP 1.Wash the carrots and peel them from top to bottom. Cut off the top and then grate them finely using a grater.
  • STEP 2.2 In a container boil two packets of milk without water. Crush the cardamoms and cloves and add them to the milk.
  • STEP 3.3 Once the milk comes to a boil, reduce the flame to low.
  • STEP 4.4 Now take a kadhai, heat up 1 tbsp ghee and fry the crushed cashews and some raisins. Once golden brown, set them aside.
  • STEP 5.5 In the same kadhai, add 3 tbsp ghee and then add the grated carrots. Add another 1 tbsp ghee and keep on stirring.
  • STEP 6.6 Keep it stirring until all the water content in the carrots dries up and they change the colour.
  • STEP 7.7 After stirring for 5 to 10 mins, lower the flame and gradually add the milk. Now turn the flame higher and keep boiling them. DO NOT cover it at any point.
  • STEP 8.Once the milk dries up to a certain extent and it just turns to thicken up, add 20 to 25 batasha (can be adjusted along with desired sweetness).
  • STEP 9.9 Keep stirring in between in order to avoid it from sticking at the bottom of the kadhai.
  • STEP 10.10 Once the milk dries up to another extent and the halwa is neither too thick nor too runny, add 2 tbsp jaggery. It gives the halwa a beautiful colour without altering the taste.
  • STEP 11.11) Now turn off the flame. And after cooling a little bit pour it into the serving bowl. Decorate it with any kind of dry fruits (I used crushed cashews).
  • STEP 12.Serve with roti, poori, Paratha as a side dish or just have it as a dessert.
