Caramel kheer is a very delicious dessert which can enhance your taste buds. It is normal rice kheer but only the difference is that I have used caramel syrup instead of plain sugar as sweetener.
STEP 1.Coarsely grind rice in a mixer jar and wash the rice.
STEP 2.Heat ghee in a saucepan and fry cashews and almonds, keep aside.
STEP 3.Add sugar in remaining ghee and start heating the pan at medium flame slowly, it starts to melt and the colour of the sugar syrup starts turning brown.
STEP 4.Add 1/4 cup water and let it boil, then switch off the heat.
STEP 5.Boil milk and add washed broken rice into that and let it cook.
STEP 6.Cook till it starts thicken and milk reduced into the pan at 1/3rd.
STEP 7.Add fried nuts, milk powder and cardamom powder.
STEP 8.When it thickened, turn off the heat.
STEP 9.Heat caramel syrup for 3-5 seconds and add the prepared caramel to the thickened kheer and give a final stir.
STEP 10.Mix well and garnish with nuts, serve chilled for best results.
