Back then, caramel was crunchy, made by crystallising sugar in boiling water. There is a theory that milk and fat was added to the recipe to make caramel chewy instead of brittle. It’s also believed that sugar beet juice may have been used instead of regular sugar, as the latter was very expensive and considered a luxury. Today, caramel can have various textures. “Short caramel” is soft and “long caramel” is chewy. Caramel is produced when milk solids are heated with sugar.
