Ingredients for Cansi Recipe

  • 1/4 kilogram Beef Shanks
  • 125 gram Bone Marrow
  • 1/4 Onion, Quartered
  • 1 cloves Cloves Garlic, Crushed
  • 1/4 teaspoon Whole Peppercorns
  • 1/2 tablespoon Batwan Fruits Tamarind Powder
  • 1/4 Small Cabbage, Quartered
  • 1/2 Eggplants, Sliced
  • 2.50 piece S Okra
  • As required Fish Sauce Or Salt To Taste
  • as per your need Calamansi Or Lime, For Serving

Cooking Directions

  • STEP 1.In a large pot, bring water to a boil and add the beef shanks. Boil for 5 minutes to remove impurities.
  • STEP 2.Remove the beef shanks from the pot and discard the water. Rinse the beef shanks under running water.
  • STEP 3.Return the beef shanks to the pot and add enough water to cover them. Bring to a boil and skim off any foam that rises to the surface.
  • STEP 4.Add the bone marrow, onion, garlic, and peppercorns to the pot. Reduce the heat to low and simmer for 2-3 hours until the beef is tender.
  • STEP 5.Add the batwan fruit or tamarind powder to the pot to give the soup its sour flavor. Simmer for another 10 minutes.
  • STEP 6.Add the vegetables such as cabbage, eggplant, and okra. Cook until the vegetables are tender.
  • STEP 7.Season with fish sauce or salt to taste. Serve hot with steamed rice and calamansi or lime on the side.

Cooking Tips

  • Boiling the beef shanks before cooking helps remove impurities and results in a cleaner-tasting soup.
  • Simmering the soup for a longer time allows the flavors to develop and the beef to become tender.
  • You can adjust the sourness of the soup by adding more or less batwan fruit or tamarind powder.

  • Cansi can be stored in the refrigerator for up to 3 days.
  • Reheat the soup on the stovetop over low heat until heated through.
