Ingredients for Cannoli With Nolen Gurer Makha Sandesh filling Recipe

  • As required Cannoli Shell:
  • 0.07 cup • All Purpose Flour
  • 0.13 tbsp • sugar
  • 1/50 tsp • Salt
  • 0.07 tsp • baking powder
  • 0.13 tbsp • Cold Unsalted Butter (cubed)
  • 0.07 nos • nos. Egg
  • 0.07 tbsp • Red wine vinegar
  • 1/5 tbsp • Grape Juice
  • As required • Vegetable oil
  • As required For frying
  • 0.07 nos • nos. Egg
  • As required Beaten
  • As required Nolen Gurer Makha Sandesh filling:
  • 0.17 litre • Milk
  • 0-0.07 tbsp • Yogurt
  • 0.07 tsp • vinegar
  • 1/10 cup • Nolen Gur / Date palm jaggery
  • As required Grated
  • 0.07 tsp • cardamom powder
  • 1/50 cup • Pistachio
  • As required Chopped
  • As required Garnish:
  • As required • Dark chocolate
  • As required Melted
  • As required • Icing sugar
  • As required • Pistachio
  • As required roughly ground

Directions: Cannoli With Nolen Gurer Makha Sandesh Filling Recipe

  • STEP 1.Cannoli Shell:
  • STEP 2.• In a Food processor or mixing bowl combine the flour, salt, sugar and baking powder.
  • STEP 3.• Then add the butter and egg and mix thoroughly.
  • STEP 4.• Next add the red wine vinegar, grape juice and stir until well combined and dough comes together.
  • STEP 5.• Form dough into a flat disc and wrap in plastic wrap. Refrigerate for at least one hour.
  • STEP 6.• Place about a half of the dough on lightly floured surface, leave other half of the dough in the fridge.
  • STEP 7.• Roll out the dough into a thin sheet about 1/4-inch thick.
  • STEP 8.• Using a 5 inch round cookie cutter, cut out the dough into circles. Repeat rolling and cutting with remaining dough.
  • STEP 9.• Wrap the circles around the Cannoli tubes, making sure their ends overlap. Brush the inside of one end with a bit of beaten egg, then press them together to ensure the two ends adhere to each other.
  • STEP 10.• Deep fry in moderately hot (180°C/ 350°F) oil, until golden on all sides, bubble should form on the surface of the dough as it fries. Drain and let cool completely.
  • STEP 11.• When shells are cool, gently slip the shells off their tubes. Repeat as necessary until you use up all the dough.
  • STEP 12.Nolen Gurer Makha Sandesh filling:
  • STEP 13.• Boil the milk and then add yogurt and vinegar, stir constantly till it curdles.
  • STEP 14.• Line a strainer with muslin cloth and place over a large bowl. Transfer the Channa or cottage cheese into the strainer and drain excess liquid. Tie up the muslin cloth and dip into a bowl of iced-water for a few minutes. Then squeeze out the excess water and transfer the channa on a plate.
  • STEP 15.• Add the grated Nolen gur, cardamom powder and a pinch of salt and mix everything well.
  • STEP 16.• Heat a non-stick pan, add the channa or chenna mixture and chopped pistachio, mix well and cook for 1-2 minutes.
  • STEP 17.• Take the pan off the heat, let it cool a bit.
  • STEP 18.Assemble:
  • STEP 19.• Dip the edges of the cannoli shells into melted chocolate and then dip into roughly grounded pistachio, keep aside.
  • STEP 20.• Transfer the makha sandesh filling into a pastry bag with one of the corner cut.
  • STEP 21.• Squeeze the bag to pipe filling into each end of the cannoli shell, making sure its completely filled inside.
  • STEP 22.• Place on a serving platter and dust them with some icing sugar. Enjoy!!
