Cooking Directions

  • STEP 1.Preheat the oven to 375°F (190°C).
  • STEP 2.In a large skillet, heat olive oil over medium heat. Add the mushrooms and cook until they release their moisture and start to brown, about 5 minutes. Remove from the skillet and set aside.
  • STEP 3.In the same skillet, add more olive oil if needed and sauté the cabbage until it wilts, about 5 minutes. Season with salt and pepper. Remove from the skillet and set aside.
  • STEP 4.In a bowl, mix together the ricotta cheese, egg, Parmesan cheese, and chopped parsley. Season with salt and pepper.
  • STEP 5.Spread a thin layer of tomato sauce on the bottom of a baking dish. Arrange a layer of lasagna noodles on top. Spread half of the ricotta mixture over the noodles, followed by half of the sautéed cabbage and mushrooms. Repeat the layers, ending with a layer of noodles and tomato sauce on top.
  • STEP 6.Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the lasagna is bubbly and golden on top.
  • STEP 7.Let the lasagna cool for a few minutes before serving. Garnish with fresh parsley, if desired.
