Enchiladas are made with tortillas. I think we can all agree on this. This bake, however, does not feature a single tortilla so lets just go ahead and call it enchilada-inspired. While it may not be in any way traditional, what it is is a bubble up style bake that makes it super simple to get zesty enchilada flavor on even your busiest weeknight. Since there are no tortillas to roll, it means theres very little prep but you still get lots of yummy flavor
