Since the time i tasted it at an american diner, i wanted to recreate the same flavor and taste in my kitchen. It was just what i wanted it to be--melt-in-the-mouth soup with loads of cheesy flavor with the goodness of healthy greens. A must try for all soup lovers, and yes, it's purely vegetarian. This soup goes well accompanied by toasted garlic bread, or even for that matter leftover rice or simply just slurp on it as i did.
