Very easy to make stir-fry from brinjal. This is the simple and tasty version of a Kerala style Vazhuthana recipe. Vazhuthana or Vazhuthanga is the Malayalam name for brinjal. Different varieties of brinjal available in Kerala – Green, vilot, vilot with white shade in long and round shapes. Try this very easy and simple recipe.

Ingredients for Brinjal Thoran Recipe

  • 1 No.s Chopped brinjal
  • 1 No.s Chopped Onion
  • 3 No.s Sliced green chilly
  • 1 sprig Curry leaves
  • 1/2 cup Grated coconut
  • 1/2 teaspoon Cumin powder
  • As required Salt
  • 3 Chopped garlic pods
  • 1/2 teaspoon Mustard seeds

Directions: Brinjal Thoran Recipe

step 1

  • STEP 1.Soak the chopped brinjal in water for 30 minutes to remove the stain.

step 2

  • STEP 1.In a hot pan splutter ½ tsp of mustard seeds.

step 3

  • STEP 1.Add chopped onion, chopped garlic and sliced green chilly. Saute till the onion becomes pale brown and tender.

step 4

  • STEP 1.Add 1 chopped brinjal and stir cook.

step 5

  • STEP 1.Sprinkle a bit of water into the pan and cook covered in a medium flame for 5 minutes.

step 6

  • STEP 1.Then add ½ tsp chilly powder, ½ tsp cumin powder, ¼ cup of grated coconut and a pinch of salt to the pan. Mix well all the ingredients.

step 7

  • STEP 1.Cook in the vessel covered for another 5 minutes on a low flame and garnish with few curry leaves.
