  • 0.67 Small Brinjals, Chopped
  • 0.33 Onion, Finely Chopped
  • 0.33 teaspoon Ginger Garlic Paste
  • 0.17 teaspoon Mustard Seeds
  • 0.17 teaspoon Cumin Seeds
  • as required A Few Curry Leaves
  • 0.17 teaspoon Turmeric Powder
  • 0.33 teaspoon Red Chili Powder
  • 0.33 teaspoon Coriander Powder

Directions: Brinjal Rice Recipe

Cooking Directions

  • STEP 1.Wash and soak the rice for 30 minutes. Drain and set aside.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
  • STEP 3.Add chopped onions and saut茅 until golden brown. Then add ginger-garlic paste and saut茅 for a minute.
  • STEP 4.Add chopped brinjal and cook until it becomes soft and tender.
  • STEP 5.Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  • STEP 6.Add the soaked and drained rice to the pan and mix gently.
  • STEP 7.Add water and bring it to a boil. Reduce the heat, cover the pan, and let it cook for about 15-20 minutes or until the rice is cooked and fluffy.
  • STEP 8.Garnish with chopped coriander leaves and serve hot with raita or yogurt.
