  • 0.13 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder
  • 1/4 teaspoon Coriander Powder
  • As required Salt To Taste
  • 1/4 tablespoon Tamarind Pulp
  • 1/4 tablespoon Jaggery
  • as per your need Fresh Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.Wash and chop the brinjals into small pieces.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves.
  • STEP 3.Add chopped onions and sauté until golden brown.
  • STEP 4.Add ginger-garlic paste and sauté for a minute.
  • STEP 5.Add chopped tomatoes and cook until they turn mushy.
  • STEP 6.Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  • STEP 7.Add the chopped brinjals and mix until they are coated with the spice mixture.
  • STEP 8.Cover the pan and cook on low heat until the brinjals are tender.
  • STEP 9.Add tamarind pulp and jaggery. Mix well and cook for another 5 minutes.
  • STEP 10.Garnish with fresh coriander leaves and serve hot with rice or roti.
