  • 1/2 tablespoon Oil
  • 1/4 teaspoon Mustard Seeds
  • 1/4 teaspoon Urad Dal

  • 1/4 Onion, Finely Chopped
  • 1/2 Tomatoes, Finely Chopped
  • 1/4 tablespoon Tamarind Pulp
  • 0.13 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder
  • As required Salt To Taste
  • 1/2 tablespoon Grated Coconut
  • 1/4 tablespoon Roasted Gram
  • 0.13 teaspoon Cumin Seeds
  • as per your need Coriander Leaves For Garnish

Directions: Brinjal Rasavangi Recipe

Cooking Directions

  • STEP 1.Heat oil in a pan and roast the brinjals until they turn soft and golden brown.
  • STEP 2.In another pan, heat oil and add mustard seeds, urad dal, and curry leaves. Let them splutter.
  • STEP 3.Add chopped onions and sauté until they turn translucent. Then add tomatoes and cook until they become soft.
  • STEP 4.Add tamarind pulp, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes.
  • STEP 5.Add the roasted brinjals to the pan and mix gently. Cook for another 5-7 minutes.
  • STEP 6.In a blender, grind coconut, roasted gram, and cumin seeds to a fine paste. Add this paste to the pan and mix well.
  • STEP 7.Simmer the gravy for a few minutes until it thickens. Garnish with coriander leaves.
  • STEP 8.Serve hot with steamed rice or roti.

  • Choose small and tender brinjals for better taste and texture.
  • Roasting the brinjals before adding them to the gravy enhances their flavor.
  • Adjust the spice levels according to your preference by adding more or less red chili powder.
