  • 1/2 tablespoon Oil
  • 1/4 teaspoon Cumin Seeds
  • 1/4 Onion, Finely Chopped
  • 1/4 teaspoon Ginger Garlic Paste
  • 1/2 Tomatoes, Finely Chopped
  • 0.13 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder
  • 1/4 teaspoon Coriander Powder
  • As required Salt To Taste
  • 1/4 cup Water
  • 1/2 tablespoon Chopped Coriander Leaves

Cooking Directions

  • STEP 1.Start by cutting the brinjals into small cubes and soaking them in water to remove any bitterness.
  • STEP 2.In a pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  • STEP 3.Add ginger-garlic paste, chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes are soft.
  • STEP 4.Add the brinjal cubes and capsicum slices to the pan. Mix well and cook for 5-7 minutes until the vegetables are tender.
  • STEP 5.Add water and simmer the curry for 10-15 minutes until the flavors are well blended.
  • STEP 6.Garnish with fresh coriander leaves and serve hot with rice or roti.
