Sometime during one the course of one of the game-on health challenges i was in i discovered a fantastic idea for breakfast. i'm all about easy meals that are easy to calorie count (which is how this was born). i'm also all about making sure i get a breakfast that is substantial enough to keep me full until my mid-morning snack. i had been eating eggs quite often and somehow as i was pulling out the meat or cheese i realized how fantastic it would be to lump it all together. i try not to overload too much on bread.
