Juicy succulent morsels of pork slow cooked in sweet tangy sauce. It has a perfectly balanced sweet and savory flavor. The texture of the slow-cooked pork is soft and could almost melt in your mouth. Start with ingredients, I used about a pound of pork belly and cut them into 1-inch cubes. Besides the pork belly, I also prepared ginger, star anise, bay leaves, rock sugar, dried chili peppers and seasoning sauce in advance.

Ingredients for Braised Pork Belly Recipe

  • As required Ingredients for marinade
  • 4 tablespoon Soy Sauce
  • 1 tablespoon chinese cooking wine
  • As required Ingredients for fried shallots
  • 2 No.s Onions thinly sliced
  • 1/2 cup Oil
  • As required Ingredients for braising
  • 500 gram Pork belly marinated
  • 0.33 cup chinese cooking wine
  • 50 gram rock sugar
  • 3 ginger slices
  • 3 garlic cloves
  • 2 No.s Star anise
  • 1 teaspoon dark soy sauce
  • 1 teaspoon five spice powder
  • 1.50 water ltr for braising
  • 0.33 cup fried shallots

Directions: Braised Pork Belly Recipe

step 1

  • STEP 1.1 cut 500 gms pork belly into little more than ½ inch size cubes.

step 2

  • STEP 2.2 place them in a bowl and add 2 tbsp soy sauce, 1 tbsp chinese cooking wine. Mix well to combine. Set aside to marinate.

step 3

  • STEP 3.3 to make the fried shallots, cut 2 onions into thin strips and separate them.

step 4

  • STEP 4.4 heat a small saucepan and add ½ cup of oil.

  • STEP 5.5 add the sliced shallots to the pot and fry on low heat for 5 to 8 minutes till golden brown and crispy. Stir frequently.

  • STEP 6.6 strain the shallots in a sieve. Shake off the excess oil and keep the fried shallots aside.

  • STEP 7.7 for the pork, heat the wok and add the chopped pork belly without adding any oil.

  • STEP 8.8 stir fry on medium heat. When the pork turns a little brown add ⅓ cup chinese cooking wine, 2 tbsp soy sauce, 50 gms rock sugar,3 slices ginger, 3 cloves garlic, 2 star anise, 1 tsp dark soy sauce, 1 tsp five spice powder .

  • STEP 9.9 keep stirring till the sugar melts.

  • STEP 10.10 then pour in 1 ½ ltr of water.

  • STEP 11.11 add ⅓ cup fried shallots.

  • STEP 12.12 cover the wok and bring the liquid to a boil and then turn the heat to low.

  • STEP 13.13 simmer in low for 1 to 2 hours till the meat is tender.

  • STEP 14.14 after about 1 ½ hours, the water will have reduced and there will be fat floating on the surface. Spoon the fat out of the wok to prevent the pork form being too oily.

step 15

  • STEP 15.15 at this stage turn the heat to high and remove the lid from the wok. Let the sauce reduce.

step 16

  • STEP 16.16 once the sauce thickens and has reduced well, turn off the heat.

  • STEP 17.17 transfer the braised pork to a serving bowl and serve hot with rice.
