Directions: Braised Lamb Ravioli Recipe

Cooking Directions

  • STEP 1.Start by preparing the lamb filling. Season the lamb with salt, pepper, and your choice of herbs and spices. Heat oil in a pan and sear the lamb until browned on all sides. Remove from the pan and set aside.
  • STEP 2.In the same pan, sauté onions, garlic, and any additional vegetables you prefer. Add tomato paste and cook until fragrant. Deglaze the pan with red wine and let it simmer until reduced.
  • STEP 3.Return the lamb to the pan and add enough broth to cover the meat. Bring to a boil, then reduce the heat and let it simmer for about 2 hours or until the lamb is tender. Remove the lamb from the liquid and shred it.
  • STEP 4.To make the ravioli, roll out fresh pasta dough into thin sheets. Place spoonfuls of the lamb filling onto one sheet, leaving space between each spoonful. Brush the edges of the dough with water and place another sheet on top. Press down to seal the ravioli and cut them into individual pieces.
  • STEP 5.Bring a large pot of salted water to a boil and cook the ravioli until they float to the surface, about 3-4 minutes. Drain the ravioli and set aside.
  • STEP 6.For the sauce, heat butter in a pan and sauté garlic until fragrant. Add chopped tomatoes, tomato sauce, and seasonings. Simmer for about 15 minutes until the sauce thickens.
  • STEP 7.Serve the braised lamb ravioli with the tomato sauce and garnish with fresh herbs and grated Parmesan cheese. Enjoy!
