Bottle gourd is a vegetable high in water content and is a rich source of Vitamin C and Calcium. Which helps in maintaining a healthy heart and brings down cholesterol levels. The juice of bottle gourd is beneficial for diabetic patients as it stabilizes the blood sugar level and maintains blood pressure. Though bottle gourd is not liked by all but to acquire it's health benefits and nutrients, we must include it in our diet.

Ingredients for Bottle gourd sabzi/ lauki ki sabzi Recipe

  • 150 Grams lauki (bottle gourd)
  • 1/2 Tbsp oil
  • 1/2 Tsp cumin seeds
  • A Stalk strig curry leaves
  • 1/2 Tsp coriander cumin powder
  • 1/2 Tsp red chilli powder
  • 1/4 Tsp turmeric powder
  • A Pinch Pinch of asafoetida
  • 1/2 Tbsp jaggery
  • 1/2 Tbsp lemon juice
  • To Taste Salt

Directions: Bottle Gourd Sabzi/ Lauki Ki Sabzi Recipe

  • STEP 1.1. Peel and chop bottle gourd in dices.
  • STEP 2.2. Heat oil, cumin seeds, once they splutters, add curry leaves, turmeric, asafoetida and bottle gourd dices. Mix and stir fry on high flame for 2 minutes.
  • STEP 3.3. Then add water and let it cook on slow flame, cover the vessel for fast cooking.
  • STEP 4.4. Once gourd is cooked, add all spices, salt, jaggery and mix well and cook for couple of minutes.
  • STEP 5.5. Lastly add lemon juice and turn off the heat.
  • STEP 6.6. Serve hot with roti, chapati, rice or khichdi.
  • STEP 7.Note:
  • STEP 8.1. Can add tomatoes too.
