Directions: Bob Barker's Summertime Pasta Salad Recipe
Cooking Directions
STEP 1.Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
STEP 2.In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, feta cheese, basil, and parsley.
STEP 3.In a separate small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper to make the dressing.
STEP 4.Pour the dressing over the pasta salad and toss everything together until well coated. Cover the bowl and refrigerate for at least 1 hour to let the flavours meld together.
Cooking Tips
Choose a pasta shape with nooks and crannies that can hold onto the dressing and other ingredients. Rotini, bowtie, or penne pasta work well.
You can prepare the salad ingredients and the dressing a day in advance and refrigerate them separately. Combine them just before serving to keep the pasta salad fresh.
Serving Tips
Just before serving, garnish the pasta salad with a few fresh basil and parsley leaves to add a burst of colour and extra flavour.
If you want to make it a heartier meal, you can add grilled chicken or shrimp to the pasta salad.
