This traditional Indian rice phirni made with rice, whole milk, sugar, condensed milk, nuts and cardamom powder. The twist is the color presented by butterfly pea flowers to the rice phirni.
STEP 1.1-Take 2 tbsp each of Butterfly pea flower in a separate bowl and pour about 3 tbsps hot water in each bowl.
STEP 2.2-Cover and keep the Flower aside for release its color for at least 20 minutes .
STEP 3.3- after 20 minutes strain and keep aside blue tea water for add to the kheer while it's cooking.
STEP 4.4-Wash and soak the rice for half an hour.after 30 minutes drain water and grind rice for make paste.
STEP 5.5-Boil the milk , add the rice paste and the first batch of blue tea water .cook for almost 15 minutes on medium flame meanwhile add the vanilla extract too.
STEP 6.6- Keep stirring frequently. Once the rice gets cooked add the milkmaid and cardamom powder and second batch of blue tea and cook till the phirni thickens .
STEP 7.7-Pour it in the serving bowl, Garnish it with chopped almond and pistachios.keep it in fridge and Serve chilled.
