The kebabs, that we know today, are of Middle-Eastern descent. Bihar, as a region, is popular for its litti chokha but what tends to go unnoticed is their meaty preparations. Fish curries and Champaran mutton are some of the classic delicacies from the Bihari fare. There is yet another lesser-known dish called the Bihari kebabs. The medieval age saw the coming in of grilled meat on skewers and that led to the invention of Bihari kebabs, all thanks to the Turks and Persians. These kebabs were traditionally preapared with beef, however, these days, mutton and chicken are commonly used. The melt-in-your-mouth factor owes itself to the raw papaya used in its cooking. Prepared with lots of flavoured spices, minced chicken, healthy vegetables, cheese slices, soft slider buns and tangy lemon juice, this Bihari kebab sliders are something that you should must try. From its aroma to flavour and savoury taste this snack is a great spin to the original kebabs.

Ingredients for Bihari Kabab Slider Recipe

  • 1 cup Coriander
  • 2 pods Green Cardamom
  • 1 inch Ginger
  • 2 Garlic Cloves
  • 1 pod Black Cardamom
  • 2 Red Chillies
  • As required Water
  • 500 gram Chicken Mince
  • As required Salt
  • As required Lemon juice
  • As required Oil
  • 4 Slider Buns
  • As required Mayonnaise
  • 1 Onion
  • 1 Tomato
  • 2 Cheese Slice

Steps To Prepare

  • STEP 1.Mince the chicken beforehand.
  • STEP 2.Choose soft buns for the sliders.

Cooking Directions

  • STEP 1.For the spicy masala, grind coriander, cardamom, black cardamom, garlic, ginger, red chilies, water together.
  • STEP 2.Take the minced chicken in a bowl and add salt. Add the spicy masala to that. Squeeze a lemon and blend it well.
  • STEP 3.Make little slider patties from the mixture.
  • STEP 4.Take a pan, add oil to that and shallow fry the patties until they turn golden brown.
  • STEP 5.Toast the slider buns in the same pan for two minutes from all sides.
  • STEP 6.Spread some dressing at the bottom half of the bun. Place an onion ring and a tomato slice.
  • STEP 7.Then place the patty and a slice of cheese on top of it.
  • STEP 8.Finish it with the other half of your bun on top.

Storage And Serving Method

  • STEP 1.Serve your hot and crispy bihari kebab sliders with a side of mint chutney and onion rings.
